I once spent a week in Érd, Hungary with an old friend. Their mum made me proper goulash that had been cooking over a fire all day. She used sweet paprika, which is a really vibrant red and quite different to the smoked paprika that we’re all familiar with. You find it in eastern European food shops and it’s well worth looking out for.

The goulash itself is a mixture of pork cheek and pork loin, from our own Tamworths, of course, and it’s a tomato base with red peppers. It was one of the best dishes I have ever eaten and it was really wholesome. Cooked all day over a fire in their backyard, the vegetables were from their garden, and it was just amazing.

The whole family got four or five pigs a year, reared them and butchered them themselves. They’d then share the meat out among the family and I got to try some of their chorizo as well. I wasn’t such a fan of that as there was a hint of ‘farmyard’ about it! The goulash, though, is one of those dishes I’ve always wanted to do because of that experience over in Hungary.

There’s no denying this – panang curry is my favourite dish and it’s definitely on my ‘last meal’ list. It was voted the number one curry in the world by about 50,000 people, which is weird because it’s not that well known! It has peanuts, kaffir lime leaves and galangal (a Thai ginger) in it, and it has more of a red curry base.

 

We’ve got some great North Sea cod in there, and some seared queen scallops alongside roti bread and a lovely jasmine rice.
